Basic guide to making pastry - for individual types of pastry, see below.
Pastry Ingredients:
Flour:
Use good quality flour for pastry making. It should be quite dry and it is necessary to always sieve before use to remove any lumps and introduce air. This helps to lighten the pastry. Self-raising flour can be used for short crust or suet pastry but better results are obtained if plain flour is used for richer pastries.
Fats:
The fats with the best flavour and shortening qualities for pastries are generally butter or lard, which makes the pastry rich and crisp. Margarine can be used to replace butter and there are several “hard” block vegetable fats/white margarine that can be used in place of lard.
Salt:
A little salt is advisable in pastry to improve the flavour.
Water:
Water is the most suitable mixing liquid and should and cold and fresh. For rich pastries a little lemon juice is often used to help make the pastry crisper.
General Pastry Making Tips:
- All ingredients and utensils should be kept as cool as possible. Your hands can be cooled by allowing cold water to run over the wrists.
- The pastry should be handled as little and lightly as possible.
- Add only sufficient water to mix evenly to a pliable dough. Too much water will make the pastry hard. Streakiness in the pastry can be avoided if all the water needed is added at once.
- Knead lightly with the fingertips drawing the edges of dough towards the centre, turning the pastry on a lightly floured board.
- Roll out with short sharp strokes of the rolling pin away from you. Turn the pastry not the rolling pin. Some rich pastries are improved if allowed to cool and relax between rolling.
- Collect all equipment needed and weigh up the ingredients before starting the pastry.
- When a recipe calls for a certain weight of pastry, this weight refers to the amount of flour used and not to the total amount of pastry. For example, if a recipe says you need 4 oz (112 g) Short Crust Pastry, it means that you start off with 4 oz (112 g) flour and then add all the other ingredients.
- Pastry freezes well, baked or unbaked, except Hot Water Pastry and Suet Pastry.
Choice and Preparation of Cooking Utensils
Metal plates or baking tins will give the greatest degree of under browning. This degree of under browning decreases with the use of plates made of thin china, fireproof glass, thick china or earthenware, in that order. The under browning may be improved if plates used for cooking plate tarts etc have absolutely flat bases and are stood upon a baking tray for cooking. The baking tray should be put in the position on the shelf whilst the oven is heating up.
Baking sheets or other utensils used for cooking the less rich pastries such as short crust, may be either lightly greased or left entirely un-greased. A flan ring and the baking sheet on which a flan is cooked should be well greased to prevent the pastry sticking.
Utensils used for baking pastries made with flaky, rough puff, or puff pastry should not be greased. For best results rinse or sprinkle the utensil with cold water before the pastries are put on it.
Filo Pastry :
A paper-thin translucent pastry used in Greek, Eastern European and Middle Eastern recipes. It’s ideal for making savoury parcels, greek style cheese pies (John’s “speciality” for Boxing Day), samosas and spring rolls. It’s usually layered and brushed with melted butter between the layers to maintain it’s crispy quality.
It’s the only pastry that I buy ready-made, either already frozen (or vastly reduced fresh which I then freeze!) as it is so difficult to make. It requires not only a lot of time and patience but knack. You will need quite a few attempts to be able to judge the dough's correct consistency and a lot of dummy runs at stretching it without breaking/ripping the dough.
Obviously you can make your own and, if you’re brave enough to have an attempt, try:
Ingredients:
- 4 oz (112 g) plain flour
- Pinch of salt
- Water
- 2 tablespoons olive oil
Method:
- Sieve the flour and salt together in a bowl and gradually add water to make a stiff dough.
- Oil your hands lightly and knead the dough on a board, gradually working in all of the olive oil this way until a smooth, elastic dough is achieved.
- Roll the dough in a little more olive oil, place in a bowl, cover with a damp cloth and allow to stand in a warm place for a couple of hours to allow it to rest.
- Divide the dough into 12 pieces and roll to ¼ inch (0.5 cm) thickness on a lightly floured board.
- Cover with a cloth and allow to relax again for 10 minutes.
- Cover a worktop with a smooth, clean cloth and lift each piece of the rolled dough onto it one at a time.
- Putting your hands, palms down under the dough, gently stretch the dough with the back of hands, rotating the cloth until the dough is stretched and as thin as tissue paper and in an approximately 1’ x 1’ (30 cm x 30 cm) square.
- Repeat with the other pieces of dough.
Cheese Pastry :
Used for cheese biscuits and straws, savoury tarts, pies, flans and turnovers
Ingredients:
- 4 oz (112 g) plain flour
- Pinch of salt
- Pepper
- 2 oz (56 g) butter or margarine
- 3 oz (84 g) grated cheese
- Yolk of 1 egg
- Water
Method:
- Sieve the flour, salt and pepper into a bowl and rub in the fat. Add the finely grated cheese and mix well.
- Mix to a stiff dough with the egg yolk and a little water.
- Turn on to a lightly floured board, knead gently and roll out.
Choux Pastry :
A light and airy pastry with a hollow centre cavity that is usually shaped through a piping bag to make both sweet and savoury dishes. Used for éclairs, cream buns, cheese puffs etc.
Ingredients:
- ½ pint water
- 3 oz (84 g) butter or margarine
- 5 oz (140 g) plain flour
- Pinch of salt
- 3 eggs
- ½ oz (14 g) sugar (for sweet pastries)
Method:
- Heat the water and fat together in a pan until the fat melts, bring to the boil.
- Remove from the heat and add the sieved flour and salt. Beat well with a wooden spoon until the mixture is smooth and leaves the sides of the pan. Cool slightly.
- Add the eggs, one at a time, beating well between each addition.
Flaky Pastry :
A delicious and rich pastry used for sweet and savoury pies, eg sausage rolls and cream slices. A little harder to make than most pastries as the flaky texture is achieved by kneading lightly, then folding and rolling the dough with dabs of the fat between to produce air pockets and help to separate the flakes.
Ingredients:
- 9 oz (253 g) plain flour
- Pinch of salt
- 3 oz (84 g) butter or margarine
- 3 oz (84 g) lard or hard vegetable fat
- 1 teaspoon lemon juice
- Water
Method:
- Sieve the flour and salt into a bowl.
- Divide the fat into 4 portions, so that there are two equal portions of lard and two equal portion of butter (or margarine).
- Take one portion of lard and rub unto the flour.
- Add the lemon juice and sufficient water to mix to a stiff dough. Turn on to a lightly floured board and knead lightly.
- Roll out to a strip and flake one portion of the butter (or margarine) over two-thirds of the strip of pastry, leaving a slight margin along the top and sides.
- Fold the pastry into three, folding over the uncovered third of the pastry first. Seal the edges with the rolling pin. Give the pastry a half turn and leave in a cool place for 20 minutes.
- Continue rolling and folding using next a portion of large and finally a portion of butter until the pastry has been rolled and folded 4 times.
- Leave again a cool place for 20 minutes.
- Roll and use for sweet or savoury pastries.
Fleur Pastry :
Usually used for sweet flans such as peach and apricot. It can, however, also be used in place of short-crust pastry, minus the sugar, for a slightly richer savoury flan or quiche base.
Ingredients:
- 6 oz (168 g) plain flour
- Pinch of salt
- 3½ oz (98 g) butter or margarine
- 1 oz (28 g) caster sugar
- 1 egg yolk
Method:
- Sieve the flour and salt into a bowl and rub in the fat.
- Add the sugar and mix well.
- Mix to a stiff paste with the egg yolk, working with the hands to a pliable dough.
- Turn on to a floured board and roll out.
- Use for sweet flans. If savoury flans are required, omit the sugar.
Hot Water Pastry :
Similar in texture to short-crust pastry but the dough is stiff enough to stand alone without the support of a dish. The pastry is shaped by hand whilst still warm and then filled and the top put on. Prepare the filling before making the pastry. It’s best to cut off the piece for the lid first and leave it covered with a towel in a bowl over hot water to keep it warm. Used for pork pies, game pies and other pies needing a hand-raised pastry.
Ingredients:
- 12 oz (336 g) plain flour
- ½ teaspoon salt
- 4 oz (112 g) lard or hard vegetable fat
- ¼ pint (150 ml) water
Method:
- Sieve the flour and salt into a bowl.
- Heat the water with the fat in a pan, until the fat melts. Bring to the boil.
- Pour the liquid on to the flour and mix well with a wooden spoon.
- Turn on to a lightly floured board and kneed until smooth.
- Mould at once and use for raised pies. If the pastry cools too much it becomes difficult to handle.
Potato Pastry :
An easy to make pastry that is used for savoury vegetable, meat and fish pies.
Ingredients:
- 3 oz (84 g) butter or margarine
- 5 oz (140 g) plain flour
- 1 teaspoon baking powder
- 4 oz (112 g) cooked potatoes
- Salt to taste
Method:
- Beat the fat until soft and work in the sieved flour, baking powder, salt and sieved potato.
- Work with the hands to a pliable dough.
- Turn on to a lightly floured board and roll out.
- Use for savoury pastries.
Puff Pastry :
Even harder than flaky pastry and does require a lot of patience! With more layers than flaky it’s rich and very light. Ideal for vol-au-vent cases and sweet or savoury pie crusts. As it’s so time consuming, it’s advisable to make in a large batch and freeze the excess for another day.
Ingredients:
- 8 oz (225 g) plain flour
- Pinch of salt
- 1 teaspoonful lemon juice
- Water
- 8 oz (225 g) butter
Method:
- Sieve the flour and salt together in a bowl and mix to a firm paste with the lemon juice and water.
- Turn on to a lightly floured board and knead well until the paste is smooth.
- Roll out into an oblong.
- Wrap the butter in a clean cloth and squeeze out any moisture. Lay the butter on one half of the dough. Fold the other half of dough over the butter and seal the edges with the rolling pin.
- Roll out to a strip and fold the pastry in three, sealing the edges firmly. Leave covered for 10 minutes.
- Roll and fold the pastry seven times in all, leaving it covered for 10 minutes between every other rolling.
- The pastry is improved if left covered for several hours or overnight before using.
Rough Puff Pastry :
Easier to make than flaky or puff pastry but has larger flakes and is not as light. It does, however, give a nice crispy crust. Uses include sweet and savoury pies, patties, turnovers and as an alternative pastry for sausage rolls
Ingredients:
- 9 oz (253 g) plain flour
- Pinch of salt
- 3 oz (84 g) lard or hard vegetable fat
- 3 oz (84 g) butter or margarine
- 1 teaspoon lemon juice
- Water
Method:
- Sieve the flour and salt into a bowl and add the fat, cut into lumps about the size of a walnut. Stir into the flour.
- Add the lemon juice and cold water to mix to a stiff dough.
- Turn on to a lightly floured board and roll out into an oblong.
- Fold one end up, leaving about one-third of the strip to fold down, seal the edges with the rolling pin and give the pastry a half turn.
- Continue thus until the pastry has been rolled and folded four times.
- If possible leave for an hour before using.
- Roll out and use for sweet and savoury pastries.
Short Crust Pastry :
The most common type of pastry and easy to make though it does need to be kept cool and handled as little as possible. Use for sweet and savoury flans, pies, tarts and tartlets, pasties, quiches and turnovers etc.
Ingredients:
- 8 oz (2215 g) plain flour
- Pinch of salt
- 2 oz (56 g) butter or margarine
- 2 oz (56 g) lard or hard vegetable fat
- Water
Method:
- Sieve the flour and salt together into a bowl. Add the fat and, with a knife, cut into small pieces.
- Rub the fat into the flour with the fingertips until the mixture resembles find breadcrumbs.
- Add the water and mix to a stiff dough.
- Turn on to a lightly floured board. Kneed lightly with the fingertip until free from cracks.
- Roll out and use for sweet or savoury pastry dishes.
Suet Pastry :
A good, old fashioned British pastry used for steamed and boiled sweet and savoury puddings, roly-poly puddings and dumplings. Similar to short-crust in texture but tougher and more elastic. You can use self-raising flour instead of plain and omit the baking powder. Vegetarian as opposed to beef suet can be obtained.
Ingredients:
- 8 oz (225 g) plain flour
- 1 teaspoon baking powder
- Pinch of salt
- 4 oz (112 g) shredded suet
- Water
Method:
- Sieve the flour, baking powder and salt together in a bowl.
- Add the shredded suet and mix well.
- Mix to a stiff dough with the water.
- Roll out and use at once for sweet and savoury roly-polys and boiled and steamed puddings.
How to get my ex back? We were together for 2 years, he now has a new girlfriend but....

1. Stop sleeping with him, don't call him, don't "accidently" text him. At the moment this guy has his cake and is being able to eat it! Keep yourself occupied going out with friends, if he sees you being happy and getting on with your life it might make him realise what he's lost, and you might realise you are better off without him!!
2. Hmmmm! He certainly has got it made! You and his new girlfriend to have sex with, lucky bloke. Hope you are taking precautions to prevent diseases being passed about between you all? If he says he loves her then he has surely been honest with you, tell him where to go next time he contacts you and avoid him. He may still have feelings for you but he needs to finish with the other girl first, you don't want to be a spare or 2nd best do you? He may realise its you he wants in time but for now get rid of him, he's messing you about.
3. He has told you he has a new girlfriend and he has told you he loves her. However much you don't want to hear it, he has moved on. I don't doubt he still has feelings for you but I think you're perhaps clinging on in the hope its you he really loves and hence the reason you slept with him. Did you hope he would 'come to his senses' in bed? Obviously that didn't work, so what's your next plan? Don't sleep with him, don't text him, don't go out of your way to speak to him or see him. I've been there and know how painful it is!
How to deal with not having any real close friends? I always seem to get to know the wrong people and I am pretty much a homebody as well...

Sometimes we have close friends without even realising it. It may be that you have people around you who feel closer to you than you do to them. take time to think about those relationships first, and nurture them. In my experience close friendships come from having something in common, such as music/hobbies/children - take up a new hobby, something that will take you out of the house, or borrow a dog to take for a walk. Another idea might be to look up an old school friend! Good luck!

Explain that while you think the world of her, you're just not attracted to other girls and she shouldn't waste her time longing for something that isn't ever going to happen. She should respect your wishes if she thinks anything of you as a friend.
